Cowboy Stew

Penny Jones, Davenport (Scott County)

 

6 slices bacon

1 cup sliced onion

½ cup green pepper, chopped

1 clove garlic, chopped or crushed

1 tablespoon chili powder

1 can kidney beans, drained

2 cups cooked, cubed potatoes

1 ½ pounds ground beef

2 cans tomatoes

1 teaspoon salt

½ teaspoon pepper

1 can corn, drained

Cook bacon and crumble it, pitting it aside. Sauté onion and garlic in bacon fat. Add beef and cook until it loses pink color. Add tomatoes, salt, pepper, and chili powder. Cover and simmer for 15 minutes. Add vegetables and cover and simmer 15 minutes more. Ladle into bowls and sprinkle the bacon on top.
